New grill-smoked one kilogram Rosedale Ruby sirloin from Australia at $138++ (serves two)

Listed on TripAdvisor as one of the top ten steakhouses in Singapore, the new one kilogram bone-in Rosedale Ruby sirloin is seasoned with chef’s special marinade, then masterfully grilled over an open-flame charcoal grill before smoked to finish, giving it an alluring woodsy char aroma. The new steak cut is served with fragrant dried rose petal salt and presented to diners in a closed glass dome for a show-stopping theatrical presentation that evokes all senses of sight, scent and taste.

Rosedale Ruby herd is raised 100 percent hormone and chemical free on the pristine pasture across South Eastern Australian farmland and then grain finished for approximately 110 days to ensure the finest flavour, tenderness, marbling and nutrition. Every cut of Rosedale Ruby A+ premium grade free-range beef comes from herd of young award-winning, prime Angus-Charolais cattle that are less than 36 months of age.

Driven by the passion of using only the freshest seasonal ingredients, Chef Yohhei Sasaki of il Cielo rooftop Italian restaurant will be celebrating the start of the season with the curated Summer Opulence tasting menu that is available for a limited time only this May and June. Staying true to the restaurant’s ethos of elevating Italian gastronomy to its peak, diners can expect a sensorial culinary journey through handcrafted cuisine using refined Italian techniques perfected with Japanese precision.

The Summer Opulence menu represents Chef Sasaki’s expression of the season, showcasing a line-up of both Italian and Japanese specialities that incorporate in-season ingredients flown in from Italy and Japan. The menu spotlights premium ingredients, such as fresh snow crab from Hokkaido, Sicilian red prawns and three kinds of Sicilian tomatoes, Japanese eggplant and myoga (ginger flower).

Verde Kitchen Pick the Right Catch

With more than 80 percent of the world’s marine fish stocks either fully exploited or overfished, Verde Kitchen will be dedicating a special ‘Pick the Right Catch’ theme with seasonal highlight menu items for diners from 1 June to 30 September, 2019 that supports the sustainable seafood movement.

In addition to raising awareness on sustainable seafood dining, the seasonal menu also serves to support World Oceans Day on June 8, which invites people around the world to celebrate and honour the ocean. You can expect a wholesome lunch that is big on flavours, nourishing for the body and sustainable for the ocean.

The special ‘Pick the Right Catch’ creations include:

  • Sesame crusted seared MSC-certified U.S. scallops with asparagus, snow peas, watercress and miso dressing
  • Grilled MSC-certified fish fillet served with grapefruit, orange and shaved fennel citrus salad drizzled with smoked olive oil
  • Almond-crusted ASC-certified salmon with arugula, feta cheese and green pea mash with coconut oil dressing
  • MSC-certified nonya-style New Zealand rockling fish with spicy sour tomato and pineapple gravy, organic okra and brown rice

Currently, 60 percent of seafood served on Verde Kitchen’s menu carries the Marine Stewardship Council (MSC) or Aquaculture Stewardship Council (ASC) eco-labels, ensuring the seafood sources are either sustainably caught or responsibly farmed respectively.
